Peanut-Crusted Turkey Sandwiches

Ingredients
1/3 Cup unsalted butter
24 Slices raisin bread
6 Large eggs, well beaten
2-1/4 Cups peanuts, finely chopped
3/4 Cup apricot jam
2 Tablespoons honey mustard
2-1/4 Pounds COOKED TURKEY BREAST, sliced thin
As needed fresh fruit salad, accompaniment

  1. Melt butter in a 10 to 12 inch skillet over low heat.
  2. Dip one side of each bread slice into beaten egg and then into peanuts, coating well.
  3. Place in skillet, coated side down.
  4. Cook over low heat until lightly browned, 3 to 4 minutes.
  5. Blend apricot jam with honey mustard; spread on uncoated side of grilled bread slices.
  6. Divide turkey into 3-ounces portions and arrange turkey on 12 bread slices. Top with remaining bread slices, jam mixture down.
  7. Slice on the diagonal and serve immediately. Serve with a fresh fruit salad, if desired.
