Saltimbocca Sandwich

Ingredients
As needed vegetable oil
4 Bunches sage leaves, separated
1 Pound Mascarpone cheese, room temperature
1 Pound cream cheese, room temperature
16 Slices flatbread
1 Pound SMOKED TURKEY BREAST, thinly sliced
1 Pound prosciutto, thinly sliced
12 Ounces lettuce leaves, washed and dried

  1. In a heavy skillet, heat oil over medium-high heat. Briefly fry sage leaves until bright green and crispy. Remove from oil and drain; reserve.
  2. In a bowl, combine Mascarpone and cream cheeses.
  3. Spread cheese mixture on half the bread slices. Layer with smoked turkey, prosciutto, lettuce and reserved sage leaves. Top with second slice of bread.
  4. Grill in a panini press or under a broiler until cheese bubbles. Serve warm.
