Black Forest Turkey Ham and Cheese on Rye

Ingredients
Marinated Red Onions
3 Tablespoons white wine vinegar
1 Tablespoon Dijon style mustard
1-1/2 Teaspoons black pepper, freshly ground
1/2 Cup olive oil
3 Each red onions, sliced thin
24 Slices pumpernickel or caraway bread
3/4 Cup Dijon style mustard

3 Pounds SMOKED TURKEY HAM, thinly sliced
18 Ounces Muenster cheese, sliced

Combine vinegar, 1-tablespoon mustard, and black pepper in a mixing bowl.
Whisk in olive oil until smooth.
Add the onions and let stand 15-20 minutes.
Spread 12 slices of bread with Dijon mustard.
Top each slice of bread with 4 ounces of thinly sliced smoked turkey ham.
Top turkey ham with a 1-1/2 ounces of cheese.
Arrange marinated red onion mixture on top of turkey ham.
Top with the other slice of bread. Slice on the diagonal and serve.
