French Riviera Turkey Sandwich

Ingredients
1/4 Cup unsalted butter, softened
1 Tablespoon fresh tarragon
Dash fresh lemon juice
1-/12 Pounds ROASTED TURKEY BREAST, sliced
8 Small baguettes, sliced
16 Stalks fresh asparagus, grilled or steamed
1-1/4 Pounds Brie cheese, thinly sliced

  1. Cream butter. Stir in tarragon and lemon juice.

  1. Spread softened tarragon butter on split baguettes. Lightly grill.
  2. Layer 3 ounces turkey breast into each grilled baguette.
  3. Place 2 asparagus lengthwise along edge of baguette. Top evenly with Brie.
  4. Place under broiler and heat just until cheese begins to melt & bubble and asparagus is slightly warm. Serve immediately.
