| As needed vegetable oil |
| 4 Bunches sage leaves, separated |
| 1 Pound Mascarpone cheese, room temperature |
| 1 Pound cream cheese, room temperature |
| 16 Slices flatbread |
| 1 Pound SMOKED TURKEY BREAST, thinly sliced |
| 1 Pound prosciutto, thinly sliced |
| 12 Ounces lettuce leaves, washed and dried |

- In a heavy skillet, heat oil over medium-high heat. Briefly fry sage leaves until bright green and crispy. Remove from oil and drain; reserve.
- In a bowl, combine Mascarpone and cream cheeses.
- Spread cheese mixture on half the bread slices. Layer with smoked turkey, prosciutto, lettuce and reserved sage leaves. Top with second slice of bread.
- Grill in a panini press or under a broiler until cheese bubbles. Serve warm.
