| 1/4 Cup unsalted butter, softened |
| 1 Tablespoon fresh tarragon |
| Dash fresh lemon juice |
| 1-/12 Pounds ROASTED TURKEY BREAST, sliced |
| 8 Small baguettes, sliced |
| 16 Stalks fresh asparagus, grilled or steamed |
| 1-1/4 Pounds Brie cheese, thinly sliced |

| Tarragon Butter |
- Cream butter. Stir in tarragon and lemon juice.

| Procedure |
- Spread softened tarragon butter on split baguettes. Lightly grill.
- Layer 3 ounces turkey breast into each grilled baguette.
- Place 2 asparagus lengthwise along edge of baguette. Top evenly with Brie.
- Place under broiler and heat just until cheese begins to melt & bubble and asparagus is slightly warm. Serve immediately.
