| 1/2 Pound onions, finely diced |
| As needed olive oil |
| 6 Pounds GROUND TURKEY |
| 3/4 Cup pimento-stuffed olives, drained and finely chopped |
| 1/3 Cup parsley, chopped |
| 2 Tablespoons garlic, minced |
| 1-1/2 Teaspoons ground cinnamon |
| 3/4 Teaspoon freshly grated nutmeg |
| 1 Tablespoon salt |
| 1-1/2 Teaspoons freshly ground black pepper |
| 1-1/2 Cups sour cream |
| 1-1/2 Cups Feta cheese, crumbled |
| 24 Each pita bread |
| 1-1/2 Pounds cucumber, small dice |

- Caramelize onions with oil. Cool and reserve.
- Mix ground turkey, caramelized onions, olives, parsley, garlic, cinnamon, nutmeg, salt and pepper together and form into 4-ounce patties.
- Grill over direct heat or cook in 350 degree F oven to an internal temperature of 165 degrees F.
- Combine sour cream and Feta cheese in food processor and pulse lightly to combine.
- Place burger in folded pita and top with Feta mixture and cucumbers.
