2 Tablespoons  fresh lemon juice
1 Clove  garlic, minced
1 Cup  green pepper, seeded and thinly sliced
As needed  hot cooked rice
1 Teaspoon  Italian seasoning, OR 1/4 teaspoon each basil, oregano, thyme & marjoram
To Taste  salt and freshly ground black pepper
1-1/2 Pounds  TURKEY THIGHS, skinned, boned and cut into 1-inch cubes
1 Tablespoon  vegetable oil
