2 Pounds  TURKEY THIGHS, skinned and excess fat removed
As needed  unsalted butter
3/4 Cup  unsalted butter, softened
3 Slices  white sandwich bread, toasted
1/4 Cup  whole berry cranberry sauce
2 Cups  whole milk
1 Cup  yellow cornmeal
