Fresh String Beans with Smoked Turkey
| 2-1/2 Pounds fresh string beans |
| 2 Cups cold water |
| 1 Cup chopped onion |
| 1/2 Cup chopped and seeded green bell pepper |
| 2 Cloves garlic, minced |
| 1/2 Teaspoon seasoned salt |
| 1/2 Teaspoon pepper |
| 1 (about 1 pound) SMOKED TURKEY WING |
| 15-16 Ounces TURKEY BROTH or canned low-sodium chicken broth |
| |
- Remove stems from beans, wash thoroughly and cut into 2-3 inch pieces.
- Combine water, onion, bell pepper, garlic, salt, pepper, turkey and broth in a Dutch oven or stockpot; bring to a boil. Add beans; cover.
- Reduce heat; simmer 30 minutes. Cover and simmer 30 minutes or until beans are tender. Remove from heat; and keep warm.
- Remove turkey from bone, shred turkey with 2 forks and return to stockpot. Heat thoroughly.
