Spicy Turkey and White Bean Chili

1 Tablespoon canola oil
1 Pound TURKEY CUTLETS, cut into 1/2-inch cubes
1-1/4 Cups chopped onions, DIVIDED
1 (14.5-Ounce) can diced tomatoes with mild green chiles
1 (15 to 19 Ounce) can white beans, undrained
1 (1-1/4 Ounce) package white chicken chili seasoning
 
  1. Heat oil in a large heavy skillet over medium-high heat until oil is hot.
  2. Add turkey cubes and 1 cup onions (reserve remaining onions for topping). Sauté for 4 to 5 minutes or until turkey is cooked through and onions are soft.
  3. Stir in tomatoes, beans and seasonings. Cover and bring to a boil, reduce heat immediately and simmer for 10 minutes.
  4. Ladle into bowls and top each portion with 1 tablespoon chopped onions.
