Autumn's Amber Beer and Sausage

1 Teaspoon olive oil
1 Pound SMOKED TURKEY SAUSAGE, herb flavored, blanched & sliced 1/2-inch thick
1/2 Pound yellow onion, thinly sliced
3/4 Pound savoy cabbage, shredded
3/4 Pound red skinned new potatoes, quartered
4 Ounces California ripe olives, whole, pitted, drained
1 Cup amber beer
2 Teaspoons Dijon mustard
1/2 Teaspoon kosher salt
1/4 Teaspoon coarsely ground black pepper
2 Tablespoons chopped dill
 
  1. In a braising pot, heat olive oil over medium-high heat. Add sausage and brown for 4-6 minutes, stirring occasionally. Add onions and continue to cook for 4-5 minutes. Stir in cabbage and potatoes.
  2. Mix in olives, beer, mustard, salt and pepper and bring to a boil. Immediately reduce heat to low. Cover and gently simmer for 20 minutes, stirring occasionally.
  3. Remove from heat and stir in chopped dill.
