Fresh Fruit Trifle
| 2 Medium oranges |
| 16-Ounces nonfat vanilla yogurt |
| 1/4 Cup orange juice |
| 2/3 Cup strawberry preserves |
| 4 Large kiwis, peeled and thinly sliced |
| 2 Cups fresh strawberries, washed and drained |
| 11 to 13 Ounce prepared angel food cake |
| |
- Grate or zest orange rind and chop fine. Measure 1 tablespoon orange rind and mix with yogurt. Peel and section oranges; reserve.
- In a small bowl, mix orange juice and strawberry preserves together, reserve.
- Reserve 1 large berry for garnish. Cap and slice remaining berries.
- Cut cake into 1-inch cubes.
- Place ½ of cake cubes in bottom of a 2 - 3-quart glass bowl. Top with 1/3-cup strawberry preserve mixture. Place a circle of sliced kiwi around lower edge of bowl; add ½ of orange sections and ½ cup strawberries. Top with ½ of yogurt mixture.
- Repeat layering of cake and strawberry preserves. Place a circle of strawberries around edge of bowl, add remaining fruit. Top with remaining yogurt.
- Garnish with whole strawberry. Cover and chill at least 3 hours or up to 24 hours. Portion: ½ cup.
