Fresh Fruit Trifle

2 Medium oranges
16-Ounces nonfat vanilla yogurt
1/4 Cup orange juice
2/3 Cup strawberry preserves
4 Large kiwis, peeled and thinly sliced
2 Cups fresh strawberries, washed and drained
11 to 13 Ounce prepared angel food cake
 
  1. Grate or zest orange rind and chop fine. Measure 1 tablespoon orange rind and mix with yogurt. Peel and section oranges; reserve.
  2. In a small bowl, mix orange juice and strawberry preserves together, reserve.
  3. Reserve 1 large berry for garnish. Cap and slice remaining berries.
  4. Cut cake into 1-inch cubes.
  5. Place ½ of cake cubes in bottom of a 2 - 3-quart glass bowl. Top with 1/3-cup strawberry preserve mixture. Place a circle of sliced kiwi around lower edge of bowl; add ½ of orange sections and ½ cup strawberries. Top with ½ of yogurt mixture.
  6. Repeat layering of cake and strawberry preserves. Place a circle of strawberries around edge of bowl, add remaining fruit. Top with remaining yogurt.
  7. Garnish with whole strawberry. Cover and chill at least 3 hours or up to 24 hours. Portion: ½ cup.
