Tex-Mex Turkey Burgers
| 1-1/4 Pounds GROUND TURKEY |
| 3/4 Cup crushed baked tortilla chips |
| 1/4 Cup sliced scallions |
| 1 Large egg, slightly beaten |
| 1 Teaspoon minced garlic |
| 1 Teaspoon chili powder |
| 1 Teaspoon ground cumin |
| 1/4 Teaspoon salt |
| 2 Teaspoons oil |
| 4 Medium Kaiser buns |
| 4 Medium lettuce leaves, washed, drained and chilled |
| 1/4 Cup reduced fat sour cream |
| 1 Tablespoon minced scallions |
| As needed pickles and peppers |
| |
- Mix turkey, chips, scallions, ˝ cup cold water, egg, garlic, chili powder, cumin and salt in a large bowl until very well blended. Shape into 4 burgers.
- Heat oil in a large nonstick skillet over medium heat. Sauté burgers, 12 to 15 minutes, turning once. Cook until turkey is no longer pink at center and the internal temperature registers 165°F on a meat thermometer inserted from side to middle.
- Meanwhile mix sour cream with minced scallions.
- Serve burgers on buns with lettuce. Top with 1 tablespoon sour cream mixture. Serve with pickles and peppers.
