1/4 Cup liquid egg substitute
1 (14-1/2-Ounce) can diced tomatoes, no added salt, undrained AND divided
1/2 Cup finely chopped onion
1 Tablespoon garlic, minced
1/2 Cup quick-cooking oats
1/4 Cup grated Parmesan cheese
1/3 Cup chopped parsley
1 Teaspoon black pepper
1/2 Teaspoon basil leaves, dried
1/2 Teaspoon dried oregano
12 Ounces ITALIAN TURKEY SAUSAGE, removed from casings
8 Ounces lean GROUND TURKEY
1/3 Cup pasta sauce, light
 
  1. Heat oven to 375 degrees F. Line a rimmed baking sheet with nonstick foil.
  2. Beat egg substitute in large bowl; stir in half the tomatoes, onion, garlic, oats, cheese, parsley, pepper, basil and oregano. Mix in turkey sausage and ground turkey until blended. Place on lined pan and pat into a 9 x 4-½-inch loaf.
  3. Bake 45 minutes or until a meat thermometer inserted in the center registers 160 degrees F. Remove from oven, brush loaf with pasta sauce and bake 10 minutes more or until sauce looks set and the internal temperature registers 165 degrees F.
  4. Let stand 10 minutes before slicing. Meanwhile, heat remaining canned diced tomatoes and serve with sliced turkey loaf.
