1 Pound GROUND TURKEY, cold
2 Drops liquid smoke
2 Teaspoons salt
1-1/4 Teaspoons dried sage leaves
1 Teaspoon sugar
1/2 Teaspoon ground ginger
1 Teaspoon poultry seasonings
1/2 Teaspoon freshly ground black pepper
1/4 Teaspoon cayenne pepper
1/4 Teaspoon dried parsley
1/4 Teaspoon garlic powder
1/4 Teaspoon coriander
1/2 Teaspoon paprika
1/4 Teaspoon dried marjoram
1 Tablespoon dehydrated minced onion
Pinch ground allspice
Pinch ground cloves
Pinch ground nutmeg
 
  1. Thoroughly mix all ingredients together. Based on recipe usage, stuff into casings, working quickly so the temperature of the mixture does not rise.
  2. Cover and refrigerate for several hours to allow the flavors to permeate.
  3. Proceed with preparation according to intended recipe usage.
