Ingredients
1 Pound GROUND TURKEY
1 Cup chopped sweet onion
1/2 Cup chopped green bell pepper, seeded
1 Clove garlic, minced
16 Ounces canned crushed tomatoes, drained
1 Tablespoon dried parsley
1 Tablespoon fresh cilantro

1/2 Teaspoon dried oregano
1/2 Teaspoon crushed red pepper flakes
1/8 Teaspoon black pepper
2 15-Ounce Packages refrigerated pie crusts

  1. In large non-stick skillet over medium-high heat, sauté turkey, onion, green pepper and garlic 5 to 6 minutes or until turkey is no longer pink and vegetables are tender.
  2. Stir in tomatoes, parsley, cilantro, cumin, oregano, pepper flakes and black pepper. Reduce heat to medium and cook 10 to 15 minutes, stirring constantly, or until liquid is evaporated. Remove skillet from heat and allow to cool.

  5. Bake at 400 degrees F 15 to 20 minutes or until mini empanadas are golden brown.
  6. Garnish with additional cilantro sprigs.
  7. NOTE: Yields 24 servings with 2 empanadas per serving.
