Turkey Burgers with Cilantro Pesto

Cilantro Pesto
1 Clove garlic
1 Cup cilantro leaves, washed, dried & well packed
1/4 Cup English walnuts, chopped
1/4 Cup Parmesan cheese, grated
1/4 Teaspoon salt
1/4 Cup olive oil
 
  1. Finely chop garlic in the food processor, fitted with the metal blade. Add cilantro and process thoroughly.
  2. Add walnuts, Parmesan and 1/4 teaspoon salt; continue to process only until smooth. Scrape sides of bowl.
  3. With motor running, slowly pour in oil and process well.
  4. Cover and refrigerate for several hours.
 
Turkey Burgers
1 Pound GROUND TURKEY
1/2 onion, chopped
1 jalapeno pepper, seeded and minced
1/4 Cup prepared chunky salsa
1 Clove garlic, minced
1/2 Teaspoon dried oregano
1/2 Teaspoon salt
 
  1. Preheat grill, using the direct heat grilling method.
  2. In a medium bowl, combine turkey, onion, pepper, salsa, garlic, oregano and salt.
  3. Evenly divide mixture and shape into four burgers.
  4. Grill burgers over medium heat, 4 inches from the heat, for 5 to 6 minutes per side until turkey is cooked through to an internal temperature of 165 degrees F.
 
To Serve
4 hamburger buns, split and toasted
 
  1. Place cooked burgers in heated buns and top each turkey burger with 2 tablespoons Cilantro Pesto.
