Quick Turkey Chowder

Ingredients
2 Tablespoons butter
1 small onion, diced
1 celery stalk, diced
2 carrots, peeled and diced
2 Tablespoons all-purpose flour
3 Cups TURKEY STOCK
2 Cups COOKED TURKEY, chopped
1 potato, peeled and diced
3/4 Cup frozen corn
1/2 Teaspoon dried thyme
To Taste salt and pepper
 
  1. In a saute pan, heat butter and cook onion, celery and carrots for one minute. Remove from heat and whip in flour. Continue to cook and stir on low heat for one minute. Stir in turkey stock and bring to a boil.
  2. Reduce heat and add turkey, potato, corn and thyme. Cook over low heat for 15 minutes or until the potato is cooked. Season with salt and pepper to taste.
