Turkey Cutlets in Apricot Sauce
| Ingredients |
| 1 pound TURKEY CUTLETS (about 4 cutlets) |
| 1/2 teaspoon pepper |
| 1/4 teaspoon salt |
| 1 tablespoon margarine |
| 1 cup apricot nectar |
| 1 teaspoon fresh ginger, minced |
| 1 teaspoon soy sauce |
| 1 teaspoon corn starch |
| 4 green onions, white and green parts, cut into 1-inch pieces |
| |
- Sprinkle cutlets with pepper and salt.
- In 12" or larger nonstick skillet, melt margarine over medium high heat. Saute cutlets 2 minutes; turn and saute an additional 1-1/2 to 2 minutes or until no longer pink. Remove from skillet and keep warm.
- In small bowl, whisk together apricot nectar, ginger, soy sauce and corn starch.
- Add green onions to skillet; cook for 30 seconds; add apricot nectar mixture, stirring until thickened, about 1 minute. Pour over reserved cutlets and serve.
