Turkey Cutlets in Apricot Sauce

Ingredients
1 pound TURKEY CUTLETS (about 4 cutlets)
1/2 teaspoon pepper
1/4 teaspoon salt
1 tablespoon margarine
1 cup apricot nectar
1 teaspoon fresh ginger, minced
1 teaspoon soy sauce
1 teaspoon corn starch
4 green onions, white and green parts, cut into 1-inch pieces
 
  1. Sprinkle cutlets with pepper and salt.
  2. In 12" or larger nonstick skillet, melt margarine over medium high heat. Saute cutlets 2 minutes; turn and saute an additional 1-1/2 to 2 minutes or until no longer pink. Remove from skillet and keep warm.
  3. In small bowl, whisk together apricot nectar, ginger, soy sauce and corn starch.
  4. Add green onions to skillet; cook for 30 seconds; add apricot nectar mixture, stirring until thickened, about 1 minute. Pour over reserved cutlets and serve.
