Turkey Ham and Fruit in a Puff Pancake
| Ingredients |
| 1 Tablespoon vegetable oil |
| 1 Cup flour |
| 1/2 Teaspoon baking powder |
| 1/4 Teaspoon salt |
| 4 Large eggs |
| 1 Cup skim milk |
| 1 Can (8 ounces) pineapple tidbits, drained and patted dry with towel |
| 1-3/4 Cups TURKEY HAM, cut into 1/2-inch cubes |
| 1/2 Cup orange marmalade, heated |
| |
- Heat oil in a 10-inch cast iron or oven-proof skillet, in a preheated 325 degree F oven, for 10 minutes.
- In food processor bowl (fitted with a metal blade) or in electric mixer bowl, combine flour, baking powder, salt and eggs. With motor running, gradually add milk. Process or mix just until mixture is smooth. Pour mixture into hot skillet.
- Increase oven temperature to 425 degrees F and cook pancake for 15 minutes, lower temperature to 375 degrees F and continue baking 10 to 12 minutes or until pancake is puffed and golden brown.
- Remove skillet from oven. Immediately sprinkle pancake with well drained pineapple and turkey ham. Spoon heated marmalade evenly over turkey ham and pineapple. Puffed pancake will sink as it cools.
- To serve, slice puff pancake into six wedges.
