Turkey Ham Loaf
| Ingredients |
| 1 Pound TURKEY HAM, cut into large chunks |
| 1 Pound GROUND TURKEY |
| 1 Cup skim milk |
| 1 Egg, beaten |
| 20 Saltine crackers, crushed |
| 1/2 Cup chopped onion |
| 1/4 Teaspoon pepper |
| Vegetable cooking spray |
| 1 Can (8 ounces) crushed pineapple |
| 1 Tablespoon cornstarch |
| 1/4 Cup brown sugar |
| 1-1/2 Tablespoons mustard |
| |
- In food processor bowl fitted with metal blade, add turkey ham; pulse until turkey ham is ground.
- In large bowl combine turkey ham, ground turkey, milk, egg, crackers, onion and pepper. Press turkey mixture into 9-X 5-X 3-inch loaf pan lightly coated with vegetable cooking spray.
- Bake in a preheated 350 degree F oven for 1 to 1-1/2 hours or until meat thermometer reaches 165 degrees F, juices run clear and meat is no longer pink. Drain juices and unmold turkey loaf onto platter and turn right side-up.
- In small saucepan, over medium-high heat, drain pineapple juice. Whisk in cornstarch until blended. Stir in brown sugar, mustard and remaining pineapple. Bring sauce to boil, stirring until slightly thickened.
- To serve, cut loaf into 8 equal pieces and drizzle with pineapple sauce.
