Lite Apricot Stuffing

Ingredients
1 Cup celery, sliced
3/4 Cup onion, chopped
1-1/2 Cups TURKEY BROTH or reduced-sodium chicken bouillon
16 Slices reduced-calorie bread, cubed and dried
2 Tablespoons dried parsley
1-1/2 Teaspoons poultry seasoning
1/2 Teaspoon salt
2 egg whites
1/4 Cup dried apricots, chopped
 
MICROWAVE DIRECTIONS:
  1. In 1-quart microwave-safe bowl combine celery and onions; cover. Cook at HIGH (100% power) 2-1/2 to 3 minutes or until vegetables are tender, stirring halfway through cooking.
  2. In large bowl combine celery/onion mixture, turkey broth, bread cubes, parsley, poultry seasoning, salt, egg whites and apricots.
  3. Spoon mixture into lightly greased 2-quart microwave-safe casserole; cover. Microwave at HIGH (100% power) 7 minutes, turning halfway through cooking, or until stuffing is heated throughout.
 
CONVENTIONAL DIRECTIONS:
  1. In small saucepan, over medium-high heat, combine celery, onions and turkey broth; bring to boil. Reduce heat to low, cover and simmer 5 minutes or until vegetables are tender.
  2. In large bowl combine celery/onion mixture, bread cubes, parsley, poultry seasoning, salt, egg whites and apricots.
  3. Spoon into lightly greased 2-quart casserole; cover. Bake in a preheated 350 degree F oven for 30 minutes or until the internal temperature reaches 165 degrees F.
