Grilled Turkey with Fresh Lemon and Cracked Pepper
| 4 Large whole lemons |
| 1/2 Cup chopped green onions |
| 2 Tablespoons soy sauce |
| 2 Tablespoons olive oil |
| 1/2 Teaspoon ground ginger |
| 1/2 Teaspoon crushed red pepper flakes |
| 2 Pounds TURKEY BREAST CUTLETS, CHOPS or TENDERLOIN |
| 2 Tablespoons minced fresh garlic |
| 1/2 Teaspoon freshly cracked black pepper |
| |
- Zest lemons and measure 4 tablespoons lemon peel. Cover and set aside. Squeeze lemons to measure 1/2 cup fresh lemon juice.
- Combine lemon juice, onion, soy sauce, oil, ginger and red pepper flakes.
- Pour over turkey, coating evenly. Cover and marinate in refrigerator 30 minutes to 3 hours.
- Remove turkey from marinade and discard marinade.
- Combine reserved lemon peel, garlic and black pepper. Rub over turkey, coating evenly.
- Grill turkey over direct medium heat, about 4 to 5 inches from the heat, for 5 minutes on each side or until the internal temperature reaches 165 degrees F.
