Grilled Turkey with Fresh Lemon and Cracked Pepper

4 Large whole lemons
1/2 Cup chopped green onions
2 Tablespoons soy sauce
2 Tablespoons olive oil
1/2 Teaspoon ground ginger
1/2 Teaspoon crushed red pepper flakes
2 Pounds TURKEY BREAST CUTLETS, CHOPS or TENDERLOIN
2 Tablespoons minced fresh garlic
1/2 Teaspoon freshly cracked black pepper
 
  1. Zest lemons and measure 4 tablespoons lemon peel. Cover and set aside. Squeeze lemons to measure 1/2 cup fresh lemon juice.
  2. Combine lemon juice, onion, soy sauce, oil, ginger and red pepper flakes.
  3. Pour over turkey, coating evenly. Cover and marinate in refrigerator 30 minutes to 3 hours.
  4. Remove turkey from marinade and discard marinade.
  5. Combine reserved lemon peel, garlic and black pepper. Rub over turkey, coating evenly.
  6. Grill turkey over direct medium heat, about 4 to 5 inches from the heat, for 5 minutes on each side or until the internal temperature reaches 165 degrees F.
