Smoked Turkey and Blueberry Salad
| 1 Cup light mayonnaise |
| 1 Cup plain low-fat yogurt |
| 1/2 Cup orange marmalade |
| 1 Tablespoon freshly squeezed lemon juice |
| 1 Teaspoon fresh ground black pepper |
| 2 Pounds (6 medium) peaches, pit removed and cut in thin wedges |
| 1 Quart fresh blueberries, washed and drained |
| 1 Pound (about 4 cups) SMOKED TURKEY BREAST, cut in bite-size cubes |
| 12 to 24 Boston lettuce leaves, washed, drained and chilled |
| |
- In a bowl, combine mayonnaise, yogurt, marmalade, lemon juice and pepper.
- Add peach slices, blueberries and turkey. Fold ingredients until all surfaces are well coated.
- Serve on chilled lettuce leaves.
