Cuban Turkey and Ham Sandwiches
| Red Hot Mayo Sauce |
| 1 Tablespoon + 1 Teaspoon red hot sauce |
| 3/4 Cup mayonnaise |
| |
- Mix red hot sauce and mayonnaise together. Cover and hold for service in the refrigerator.

| Cuban Sauce |
| 3/4 Cup mayonnaise |
| 1/4 Ounce fresh mint, chopped |
| 1/3 Cup + 2 Tablespoons freshly squeezed lime juice |
| 5 Ounces minced shallots |
| 1 Tablespoon ground cumin |
| |
- Mix mayonnaise, mint, lime juice, shallots and cumin in a separate bowl. Cover and hold for service in the refrigerator.

| Assembly |
| 40 Slices crusty white bread |
| 1-1/4 Pounds Swiss cheese, 4x4, sliced |
| 1 Pound + 14 Ounces DELI TURKEY BREAST, sliced |
| 1 Pound + 14 Ounces TURKEY HAM, sliced |
| 10 Ounces unsalted butter, softened |
| As needed fruit salsa |

- For each sandwich: spread 1/2 tablespoon red hot sauce mayo sauce on one slice of bread. On other slice of bread, spread 1 tablespoon Cuban sauce. Layer each sandwich with 1 ounce cheese, 1-1/2 ounces sliced turkey and 1-1/2 ounces sliced turkey ham.
- Top with second bread slice. Butter exterior of both bread slices with 1/2 ounce butter.
- Grill each sandwich on both sides until cheese melts and bread is golden brown. Serve with fruit salsa.
