Turkey Sausage Pan Stew
| 1/3 Cup vegetable oil |
| 6 Pounds SMOKED TURKEY SAUSAGE, cut into 1/8-inch slices |
| 2 Pounds fresh fennel bulbs, sliced thin |
| 5 Cups canned diced tomatoes |
| 1-1/2 Pounds small pasta (stars, orzo, pastina) |
| 3 Cups ripe olive halves, well drained |
| 3 Tablespoons lemon zest |
| 4 Teaspoons dried oregano |
| 6 Cups cold water |
| As needed fennel fronds for garnish |
| As needed lemon slices |
| |
- Heat oil in heavy stock pot. Sauté turkey sausage and fennel in oil until browned. Stir in tomatoes, pasta, olives, lemon zest, oregano and water. Cover and simmer 20 minutes or until pasta is tender.
- If desired, garnish with fronds from the fennel and a lemon slice.
- NOTE: Can be covered and refrigerated 24 hours and reheated. If necessary, add a small amount of water while heating.
