Smoked Turkey Tacos
| 2 6-inch flour tortillas |
| 1 ounce shredded Cheddar cheese |
| 1 ounce crumbled Feta cheese |
| 3 Large eggs, beaten |
| As needed olive oil |
| 1 Ounce yellow onion, diced |
| 1 Ounce green bell pepper, diced |
| 2 Ounces SMOKED TURKEY BREAST, chopped |
| 1 Ounce tomato, seeded and diced |
| 6 Ounces rosemary potatoes |
| 2 Ounces mixed greens |
| Garnish fresh whole jalapeno |
| |
- Top tortillas with Cheddar and Feta Cheeses and melt cheese in oven.
- Scramble eggs in a non-stick skillet.
- In a separate skillet, sauté yellow onion, green peppers, smoked turkey and tomatoes until vegetables are soft.
- Add eggs to sauté skillet and mix well.
- Fill tortillas with egg/turkey mixture.
- Serve with Rosemary Potatoes, mixed greens and fresh jalapeno.
