Smoked Turkey Tacos

2 6-inch flour tortillas
1 ounce shredded Cheddar cheese
1 ounce crumbled Feta cheese
3 Large eggs, beaten
As needed olive oil
1 Ounce yellow onion, diced
1 Ounce green bell pepper, diced
2 Ounces SMOKED TURKEY BREAST, chopped
1 Ounce tomato, seeded and diced
6 Ounces rosemary potatoes
2 Ounces mixed greens
Garnish fresh whole jalapeno
 
  1. Top tortillas with Cheddar and Feta Cheeses and melt cheese in oven.
  2. Scramble eggs in a non-stick skillet.
  3. In a separate skillet, sauté yellow onion, green peppers, smoked turkey and tomatoes until vegetables are soft.
  4. Add eggs to sauté skillet and mix well.
  5. Fill tortillas with egg/turkey mixture.
  6. Serve with Rosemary Potatoes, mixed greens and fresh jalapeno.
