Turkey and Roasted Pepper Quesadilla

3 Ounces MESQUITE SMOKED TURKEY BREAST
1 10-inch flour tortilla
2 Ounces Mozzarella cheese, shredded
1 Ounce goat cheese, crumbled
1 Ounce roasted red pepper strips, well drained
1 Tablespoon sweet corn kernels
As needed guacamole and salsa
 
  1. Cut deli turkey into julienne strips.
  2. Place tortilla on a flat surface. Over bottom half of tortilla, sprinkle 1 ounce of Mozzarella and 1/2 ounce of goat cheese. Sprinkle turkey strips, pepper strips and corn over cheeses.
  3. Sprinkle remaining cheeses on top and fold top half of tortilla over filling.
  4. Place quesadilla on baking sheet and bake in a preheated 350 degree F oven for about 8 minutes or until cheese melts.
  5. Cut into 4 wedges. Serve hot with guacamole and salsa.
