Turkey and Roasted Pepper Quesadilla
| 3 Ounces MESQUITE SMOKED TURKEY BREAST |
| 1 10-inch flour tortilla |
| 2 Ounces Mozzarella cheese, shredded |
| 1 Ounce goat cheese, crumbled |
| 1 Ounce roasted red pepper strips, well drained |
| 1 Tablespoon sweet corn kernels |
| As needed guacamole and salsa |
| |
- Cut deli turkey into julienne strips.
- Place tortilla on a flat surface. Over bottom half of tortilla, sprinkle 1 ounce of Mozzarella and 1/2 ounce of goat cheese. Sprinkle turkey strips, pepper strips and corn over cheeses.
- Sprinkle remaining cheeses on top and fold top half of tortilla over filling.
- Place quesadilla on baking sheet and bake in a preheated 350 degree F oven for about 8 minutes or until cheese melts.
- Cut into 4 wedges. Serve hot with guacamole and salsa.
