Cilantro Coulis
1 Cup fresh cilantro, washed and dried
1/4 Cup chopped sweet onion
2 Tablespoons freshly squeezed lemon juice
1/2 Teaspoon ground cumin
1/4 Teaspoon EACH kosher salt and freshly ground black pepper
 
  1. In food processor, combine cilantro, onion, lemon juice, cumin, salt and pepper. Process until smooth.
  2. In a small saucepan, over medium heat, cook for 1 to 2 minutes or until heated through.
  3. Hold warm for service.
 
Turkey
1 Pound TURKEY TENDERLOINS, cut into 3/4-inch medallions
2 Teaspoons olive oil
As needed lemon wedges, for garnish
 
  1. Saute turkey medallions in hot oil for 4 to 5 minutes per side or until turkey is no longer pink in the center.
  2. For service: spoon coulis on warmed dinner plates. Serve four medallions per portion. Garnish with lemon wedges.
