Turkey Tenderloins with Cilantro Coulis
| Cilantro Coulis |
| 1 Cup fresh cilantro, washed and dried |
| 1/4 Cup chopped sweet onion |
| 2 Tablespoons freshly squeezed lemon juice |
| 1/2 Teaspoon ground cumin |
| 1/4 Teaspoon EACH kosher salt and freshly ground black pepper |
| |
- In food processor, combine cilantro, onion, lemon juice, cumin, salt and pepper. Process until smooth.
- In a small saucepan, over medium heat, cook for 1 to 2 minutes or until heated through.
- Hold warm for service.

| Turkey |
| 1 Pound TURKEY TENDERLOINS, cut into 3/4-inch medallions |
| 2 Teaspoons olive oil |
| As needed lemon wedges, for garnish |
| |
- Saute turkey medallions in hot oil for 4 to 5 minutes per side or until turkey is no longer pink in the center.
- For service: spoon coulis on warmed dinner plates. Serve four medallions per portion. Garnish with lemon wedges.
