Ingredients
4 Large plum tomatoes, seeded and diced
2 Large cucumbers, peeled, seeded and diced
1/4 Cup green onion, chopped
1 Cup fresh basil, chopped
2 Medium lemons, zested
1/4 Cup fresh lemon juice
2 Tablespoons olive oil
2 Teaspoons minced garlic
1/2 Teaspoon black pepper
2 Pounds focaccia bread, sliced horizontally
As needed fresh leaf lettuce, washed & dried
2-1/4 Pounds FULLY COOKED SMOKED TURKEY BREAST, shaved
12 Ounces Provolone cheese, shaved
 
  1. In medium bowl combine tomato, cucumber, green onion, basil, zest, lemon juice, oil, garlic and pepper. Cover and allow to stand 1 hour.
  2. On large plate, place focaccia loaf upside down. Arrange lettuce over focaccia and top with turkey, Basil Salsa and cheese. Place remaining focaccia loaf over top.
  3. To serve, slice into 12 wedges.
