Basil Salsa and Smoked Turkey Focaccia Sandwich
| Ingredients |
| 4 Large plum tomatoes, seeded and diced |
| 2 Large cucumbers, peeled, seeded and diced |
| 1/4 Cup green onion, chopped |
| 1 Cup fresh basil, chopped |
| 2 Medium lemons, zested |
| 1/4 Cup fresh lemon juice |
| 2 Tablespoons olive oil |
| 2 Teaspoons minced garlic |
| 1/2 Teaspoon black pepper |
| 2 Pounds focaccia bread, sliced horizontally |
| As needed fresh leaf lettuce, washed & dried |
| 2-1/4 Pounds FULLY COOKED SMOKED TURKEY BREAST, shaved |
| 12 Ounces Provolone cheese, shaved |
| |
- In medium bowl combine tomato, cucumber, green onion, basil, zest, lemon juice, oil, garlic and pepper. Cover and allow to stand 1 hour.
- On large plate, place focaccia loaf upside down. Arrange lettuce over focaccia and top with turkey, Basil Salsa and cheese. Place remaining focaccia loaf over top.
- To serve, slice into 12 wedges.
