Swiss Turkey Marsala

Ingredients
4 Ounces TURKEY CUTLET
As needed flour
2 Ounces clarified butter
3 Ounces brown sauce (Espagnole)
1/3 Cup button mushrooms, cleaned and sliced
2 Ounces Marsala wine
2 Slices Swiss cheese
 
  1. Place turkey between two pieces of plastic wrap. Gently pound turkey to an even ¼-inch thickness-keeping cutlet in one piece.
  2. Lightly dust turkey with flour.
  3. Sauté turkey in 1-ounce butter, turning to brown both sides.
  4. In another small pan, sauté sliced mushrooms in the remaining 1-ounce butter.
  5. Remove pan from heat and add Marsala wine to sautéed mushrooms.
  6. Reduce by half and add brown sauce. Bring to a boil while stirring.
  7. Pour sauce mixture over turkey cutlet and top with 2 slices of Swiss cheese.
  8. Place pan under preheated broiler and broil until the cheese is melted.
  9. Remove turkey from the pan with a spatula and serve on a warmed dinner plate.
