Barbecue Smoked Turkey Breast with Cranberry Jalapeno Salsa
| Turkey Preparation |
| 2 Tablespoons ground cumin |
| 1/4 Cup ground coriander |
| 1/4 Cup chili powder |
| 1/4 Cup paprika |
| 1 Tablespoon ground mustard |
| 2 Tablespoons light brown sugar |
| 2 Tablespoons salt |
| 2 Tablespoons black pepper |
| 9-10 Pound BONELESS TURKEY BREAST |
| 4 Tablespoons liquid smoke |
| |
- Combine cumin, coriander, chili powder, paprika, mustard, sugar, salt and pepper. Cover and reserve.
- Place turkey breast, skin side down and pour 2 tablespoons liquid smoke over the breast. Rub the liquid into the turkey. Sprinkle half of the spice mixture over the turkey.
- Turn the bird over and repeat the process, coating the skin.
- Roast in a 325-degree F oven. Cover the turkey with foil for the first 45 minutes. Remove the foil and continue to roast for 2-1/4+ hours or until the internal temperature reaches 165 degrees F.
- Allow to stand for 20 minutes before carving.

| Cranberry-Jalapeno Salsa |
| 12 Ounces fresh cranberries |
| 1 Cup orange juice |
| 4 Medium jalapenos, seeded and minced |
| 1 Tablespoon orange zest |
| 2 Cups sugar |
| 1 Bunch fresh cilantro, chopped |
| |
- Meanwhile, place cranberries, orange juice, jalapeno, orange zest and sugar in medium size sauce pan over medium heat. Cook cranberries until thickened, about 20 minutes.
- Remove from heat. Stir in cilantro. Allow flavors to blend for at least 20 minutes.

| Service |
- Slice the turkey. Shingle an 8-ounce portion on each dinner plate and top with cranberry-jalapeno salsa.
