Turkey Skewers
1/2 Cup whole milk
3 Tablespoons olive oil
1 Tablespoon soy sauce
3 Tablespoons onion, minced
1-1/2 Teaspoons red pepper flakes
1-1/2 Teaspoons lemon zest
1-1/2 Teaspoons fresh ginger root, peeled and minced
3 Ounces cream of coconut
6 Ounces pineapple juice
3 Pounds BONELESS TURKEY BREASTS
As needed bamboo skewers, soaked in cold water
 
  1. Combine milk, oil, soy sauce, onion, pepper flakes, lemon zest, ginger root, cream of coconut and pineapple juice.
  2. Cut turkey into 1-ounce strips. If necessary, gently flatten each piece to an even thickness.
  3. Marinate turkey in a covered container in the refrigerator for 4 to 6 hours.
  4. Weave turkey strips onto skewers. Discard marinade.
 
Peanut Sauce
2-1/2 Cups coconut milk
1-1/2 Tablespoons red curry paste
1-1/2 Ounces fish sauce
2 Tablespoons sugar
3/4 Cup smooth peanut butter
 
  1. Combine all peanut sauce ingredients in a blender or food processor. Process until smooth.
  2. Transfer to a medium saucepan and heat to a simmer, stirring occasionally. Do not boil.
 
Service
As needed spring onion sprigs, cut into fans
 
  1. Grill turkey strips about 4 inches from medium heat for 2 to 3 minutes per side or until turkey is no longer pink in the center and is cooked throughout.
  2. Serve skewers with Peanut Sauce. Garnish with spring onion fans.
