Sausage Tortilla Soup
| Ingredients |
| 3 Pounds HOT ITALIAN TURKEY SAUSAGE, medium dice |
| 8 Ounces sweet onion, small dice |
| 1 Tablespoon minced garlic |
| 1 #10 Can crushed tomatoes |
| 1 Quart TURKEY BROTH |
| 1 Cup hot salsa |
| 1 Tablespoon cumin |
| 1 Tablespoon chili powder |
| 1 Teaspoon salt |
| 1 Teaspoon black pepper |
| As needed roasted corn tortillas, crushed |
| As needed sour cream |
| As needed fresh cilantro, fine chop |
| |
- Sauté sausage, onions and garlic in oil until vegetables are tender and sausage is brown throughout. Drain well. Return to stockpot.
- Add tomatoes, broth, salsa, herbs and seasonings. Simmer, covered for 30-40 minutes until flavors have blended.
- Ladle into bowls and sprinkle each portion with ˝ ounce crushed tortilla chips, 1 tablespoon sour cream and 1 teaspoon cilantro.
- Yield: 1-1/4 gallons.
