Turkey and Wild Mushroom Stew
| Ingredients |
| 6 Pounds unsalted butter |
| 1/3 Cup garlic, sliced |
| 9 Pounds button mushrooms, cleaned and sliced |
| 9 Pounds shiitake mushrooms, cleaned and sliced |
| 9 Pounds oyster mushrooms, cleaned and sliced |
| 1 Cup fresh thyme, stemmed and chopped |
| 1 Cup fresh parsley, stemmed and chopped |
| 1 Cup fresh rosemary, stemmed and chopped |
| 42 Pounds TURKEY COMBO ROAST, cooked and sliced 1-inch thick |
| 6 Quarts dry white wine |
| To taste salt and freshly ground black pepper |
| As needed Parmesan cheese, grated |
| |
- Melt butter, add garlic and sauté until golden brown.
- Add button, shiitake and oyster mushrooms, thyme, parsley and rosemary. Sauté until mushrooms are tender and liquid has evaporated.
- Stir in turkey slices and wine. Season with salt and pepper to taste. Gently simmer until flavors blend.
- Adjust seasonings as necessary. Sprinkle with Parmesan cheese.
