Spicy Turkey Chili

Ingredients
1-1/2 Pounds onions, chopped
1 Tablespoon garlic, minced
1/4 Cup vegetable oil
6 Pounds GROUND TURKEY
1 Gallon canned diced tomatoes in juice
6 Cups canned kidney beans, drained well
1 Pound pitted ripe olives, sliced and drained
1 Pound tomato paste
1-1/2 Cups canned green chiles, diced
3/4 Cup canned jalapeno peppers, chopped
1/3 Cup chili powder
2 Teaspoons dried oregano
1 Tablespoon ground cumin
To taste salt and freshly ground black pepper
 
  1. Heat oil in a stockpot. Add onion and garlic to hot oil and sauté for about 5 minutes or until tender.
  2. Add ground turkey and cook until turkey is browned, breaking turkey into small pieces. Drain any excess drippings.
  3. Add tomatoes and juice, beans, olives, tomato paste, chiles, jalapenos, chili powder, oregano, and cumin. Add salt and pepper to taste.
  4. Bring to a boil, simmer 25-35 minutes or until desired consistency.
  5. Portion and serve, using a 12-ounce ladle.
