Seared Turkey Cutlets - Fried Tomatoes & Garlic Chive Gravy

Preparation
2 4-ounce TURKEY CUTLETS
As needed salt and freshly ground black pepper
As needed seasoned flour
1 Ounce clarified butter
2 Each tomato slices, breaded
 
  1. Season turkey cutlets with salt and pepper; lightly dredge turkey cutlets in seasoned flour. Sear in 1-ounce clarified butter in hot pan. Remove from pan and reserve 1 teaspoon pan drippings for chive sauce.
  2. Finish cutlets in oven, cooking to an internal temperature of 170 degrees F. Hold for service.
  3. Flash fry breaded tomato slices.
 
Creamy Garlic Chive Pan Gravy
1/2 Teaspoon minced garlic
1/3 Cup TURKEY BROTH
2 Tablespoons minced shallots
1 Small bay leaf
1 Teaspoon lemon juice, freshly squeezed
1/4 Cup heavy cream
2 Teaspoons fresh chives, snipped
 
  1. Heat 1 teaspoon pan drippings over medium high heat. Add minced garlic and sauté. Add turkey broth.
  2. Stir in shallots, bay leaf, lemon juice, salt and pepper to taste. Cook, stirring occasionally over medium high heat until slightly thickened, 1 to 2 minutes.
  3. Add heavy cream and cook until reduced by half (3 to 4 minutes). Remove the pan from the heat.
  4. Strain the sauce and stir in 2 teaspoons snipped chives.
 
Service
4 Ounces cornbread stuffing, prepared and baked
3 Each green asparagus, peeled and steamed crisp tender
As needed chopped parsley
As needed fresh chives
 
  1. Place 4-ounces of hot cornbread stuffing at the 10 o'clock position.
  2. Top with steamed asparagus.
  3. Position turkey cutlets at the 6 o'clock position.
  4. Place tomato slices at the 2 o'clock position
  5. Ladle 3-ounces hot Creamy Garlic Chive Gravy over turkey. Garnish with parsley and chives.
