Turkey Cutlets with Cilantro Peanut Pesto

Cilantro-Peanut Pesto
8 Cloves garlic
1 Cup dry roasted salted peanuts
3/4 Cup scallions, rough chop
1 Quart cilantro leaves, washed, dried and packed
1 Cup freshly squeezed lime juice
1 Teaspoon red pepper flakes
12 Ounces olive oil
 
  1. Place garlic, peanuts, scallions, cilantro, lime juice and red pepper in the food processor and puree until smooth.
  2. Slowly add olive oil, scraping the bowl as required.
 
Turkey Cutlets
2 Cups coconut milk
1 Cup olive oil
1 Cup honey
1 Cup cilantro leaves, washed, dried and chopped
8 Cloves garlic, minced
1/2 Cup curry powder
2-1/2 Tablespoons chili powder
2-1/2 Tablespoons cumin
1/4 Cup freshly squeezed lime juice
1/4 Cup soy sauce
As needed hot oil for stir-fry
6 Pounds TURKEY CUTLETS, cut into 1/2-inch strips
6 Pounds soba noodles, dry
 
  1. Combine coconut milk, oil, honey, cilantro, garlic, curry powder, chili powder, cumin, lime juice and soy sauce.
  2. Pour 1-1/2 cups of coconut mixture over turkey strips, tossing to coat thoroughly. Reserve remaining mixture. Cover and marinate turkey for 2 hours.
  3. Prepare soba noodles according to package directions.
  4. While cooking noodles, drain turkey. Stir-fry turkey over medium-high heat until no longer pink, about 2 to 4 minutes.
  5. Add reserved coconut mixture to turkey and heat until hot.
 
Service
As needed cilantro leaves for garnish
As needed lime wedges for garnish
 
  1. For each serving: arrange noodles in shallow bowls and top with turkey mixture.
  2. Serve with Cilantro Pesto and garnish with additional cilantro leaves and lime wedges.
