Open Face Roasted Turkey Sandwich with Caramelized Balsamic Onions

Ingredients
3 Ounces olive oil
1-1/2 Pounds yellow onions, sliced thin
3 Ounces balsamic vinegar
As needed lettuce leaves, washed, drained and chilled
3 Pounds ROASTED TURKEY, sliced thin
12 rectangular crusty rolls, split, buttered and toasted
As needed cracked black pepper
3/4 Cup fresh oregano leaves, stripped from stem
24 Large grape tomatoes
 
  1. Heat oil over medium heat. Gently sauté onions in oil until tender and golden.
  2. Add vinegar and cook about 2 minutes or until liquid has almost evaporated. Allow to cool slightly.
  3. Divide lettuce onto rolls.
  4. Place 4-ounces turkey on each roll. Top with onions, cracked black pepper and oregano leaves.
  5. Garnish with grape tomatoes.
