Open Face Roasted Turkey Sandwich with Caramelized Balsamic Onions
| Ingredients |
| 3 Ounces olive oil |
| 1-1/2 Pounds yellow onions, sliced thin |
| 3 Ounces balsamic vinegar |
| As needed lettuce leaves, washed, drained and chilled |
| 3 Pounds ROASTED TURKEY, sliced thin |
| 12 rectangular crusty rolls, split, buttered and toasted |
| As needed cracked black pepper |
| 3/4 Cup fresh oregano leaves, stripped from stem |
| 24 Large grape tomatoes |
| |
- Heat oil over medium heat. Gently sauté onions in oil until tender and golden.
- Add vinegar and cook about 2 minutes or until liquid has almost evaporated. Allow to cool slightly.
- Divide lettuce onto rolls.
- Place 4-ounces turkey on each roll. Top with onions, cracked black pepper and oregano leaves.
- Garnish with grape tomatoes.
