Sausage and Apple Frittata
| Ingredients |
| 3 Pounds TURKEY BREAKFAST SAUSAGE, small dice |
| 1 Pound Idaho potato, peeled and small dice |
| 1-1/2 Pounds sweet onion, small dice |
| 1 Pound Granny Smith apples, peeled, cored and small dice |
| 1 Teaspoon dried sage leaves |
| As needed salt and pepper |
| 48 Large eggs |
| |
- Over medium heat, brown sausage, breaking meat into small pieces. Drain well and reserve.
- In 2 tablespoons pan drippings, sauté potato and onion. Cook over low heat until softened. Add apple and cook an additional 5 minutes.
- Stir in sage, salt, pepper and reserved sausage. Hold for service.
- Whip eggs and seasonings together.
- At point of service, portion 4 cups sausage mixture and pour into a warm 12-inch sautoir/skillet. Pour 3-1/2 cups egg mixture over sausage and stir gently.
- Cover pan and cook until eggs are nearly set.
- Remove cover and place sautoir/skillet under broiler to brown eggs lightly.
- Repeat with remaining mixture to make 3 whole frittatas. Cut each into 8 wedges.
- Serve immediately or cool and serve at room temperature.
