Hearty Smoked Sausage and Potato Chowder

Ingredients
2 Pounds red potatoes, small dice
2 Quarts TURKEY BROTH
2 Ounces canola oil
1 Cup scallions, small dice
1 Cup red bell pepper, seeded and small dice
1 Cup celery, trimmed and small dice
1/2 Cup flour
2 Teaspoons white pepper
2 Pounds SMOKED TURKEY SAUSAGE, sliced thin
4 Cups whole kernel corn
2 Medium bay leaves
1 Quart whole milk
To Taste salt and pepper
As needed scallions, small dice
 
  1. Cook potatoes in simmering broth until tender. Drain and reserve potatoes and broth separately.
  2. Sauté scallions, red pepper and celery in oil until tender.
  3. Add flour and seasonings, stir until smooth. Cook, stirring constantly to a golden straw color.
  4. Gradually stir in reserved broth. Cook until mixture begins to thicken.
  5. Return reserved potatoes to kettle. Add sausage, corn and bay leaf and cook until heated throughout.
  6. Stir in milk and heat to serving temperature (do not boil). Remove bay leaves.
  7. Adjust seasoning as required. Garnish with chopped scallions.
  8. Yield: 1-1/4 gallons.
