Chipotle-chili Tartar Sauce
3/4 Cup mayonnaise
2 Tablespoons extra-virgin olive oil
2 Tablespoons minced red onion
2 Tablespoons fresh dill, chopped
1 Tablespoon canned chipotle chilies, minced
1 Tablespoon capers, drained
 
  1. Whisk ingredients in a small bowl. Season with salt and pepper.
  2. Cover and hold for service in the refrigerator.
 
Turkey Burgers
To Taste salt and pepper
1 Pound GROUND TURKEY
4 whole wheat buns, split
4 Thin slices red onion
8 Slices plum tomato
2 Bunches arugula, washed, dried and chilled
 
  1. Preheat grill/barbecue to medium heat.
  2. Form ground turkey into four 1/2-inch thick patties. Sprinkle with salt and pepper.
  3. Grill turkey until cooked through and internal temperature reaches 165 degrees F.
  4. Grill buns until just toasted.
  5. Spread 1 tablespoon sauce on bottom half of each bun. Top each with turkey burger, then 1 more tablespoon sauce.
  6. Top each with 1 onion slice, 2 tomato slices and 1/2 bunch arugula. Cover with bun tops.
  7. Serve, passing remaining Chipotle-chili Tartar Sauce separately.
