Turkey Burgers with Chipotle-Chili Tartar Sauce
| Chipotle-chili Tartar Sauce |
| 3/4 Cup mayonnaise |
| 2 Tablespoons extra-virgin olive oil |
| 2 Tablespoons minced red onion |
| 2 Tablespoons fresh dill, chopped |
| 1 Tablespoon canned chipotle chilies, minced |
| 1 Tablespoon capers, drained |
| |
- Whisk ingredients in a small bowl. Season with salt and pepper.
- Cover and hold for service in the refrigerator.

| Turkey Burgers |
| To Taste salt and pepper |
| 1 Pound GROUND TURKEY |
| 4 whole wheat buns, split |
| 4 Thin slices red onion |
| 8 Slices plum tomato |
| 2 Bunches arugula, washed, dried and chilled |
| |
- Preheat grill/barbecue to medium heat.
- Form ground turkey into four 1/2-inch thick patties. Sprinkle with salt and pepper.
- Grill turkey until cooked through and internal temperature reaches 165 degrees F.
- Grill buns until just toasted.
- Spread 1 tablespoon sauce on bottom half of each bun. Top each with turkey burger, then 1 more tablespoon sauce.
- Top each with 1 onion slice, 2 tomato slices and 1/2 bunch arugula. Cover with bun tops.
- Serve, passing remaining Chipotle-chili Tartar Sauce separately.
