Ingredients
1 Pound BONELESS TURKEY THIGHS, poached and shredded
1/3 Cup chipotle chiles in adobo sauce, pureed
1 Cup corn
3/4 Cup green olives, chopped
1/2 Cup raisins
3 to 3-1/3 Cups flour
1 Teaspoon salt
1/2 Cup vegetable oil
1/2 Cup cold water
 
  1. In a saucepan, combine poached/shredded turkey, pureed chipotle peppers, corn, olives and raisins. Add enough water to thin slightly and warm over medium heat. Set aside.
  2. In a bowl, mix together 3 cups flour and salt. Add oil and water slowly, until incorporated, and knead dough until elastic.
  3. Dust surface with remaining flour, as needed. Roll dough to 1/8-inch; cut out circles. Portion turkey mixture in the center of each. Fold over to form half-moon shapes. Seal edges with a fork.
  4. Bake in a preheated 350 degree F. oven until golden brown.
