Spicy Turkey Empanadas
| Ingredients |
| 1 Pound BONELESS TURKEY THIGHS, poached and shredded |
| 1/3 Cup chipotle chiles in adobo sauce, pureed |
| 1 Cup corn |
| 3/4 Cup green olives, chopped |
| 1/2 Cup raisins |
| 3 to 3-1/3 Cups flour |
| 1 Teaspoon salt |
| 1/2 Cup vegetable oil |
| 1/2 Cup cold water |
| |
- In a saucepan, combine poached/shredded turkey, pureed chipotle peppers, corn, olives and raisins. Add enough water to thin slightly and warm over medium heat. Set aside.
- In a bowl, mix together 3 cups flour and salt. Add oil and water slowly, until incorporated, and knead dough until elastic.
- Dust surface with remaining flour, as needed. Roll dough to 1/8-inch; cut out circles. Portion turkey mixture in the center of each. Fold over to form half-moon shapes. Seal edges with a fork.
- Bake in a preheated 350 degree F. oven until golden brown.
