Turkey Stroganoff with Linguine and Cheese Symphony

Ingredients
3 Ounces olive oil
6 Ounces TURKEY BREAST, julienned
3 Ounces TURKEY BACON
4 Ounces wild mushrooms, cleaned and sliced
1 green bell pepper, seeded and julienned
1 red bell pepper, seeded and julienned
1 sweet onion, sliced thin
3 Ounces TURKEY STOCK
1/4 Teaspoon freshly grated nutmeg
3 Ounces sour cream
1/3 Cup brandy
2 Ounces goat cheese
2 Ounces Swiss cheese, grated
2 Ounces Cheddar cheese, grated
2 Ounces egg linguine, freshly cooked and drained
2 Ounces spinach linguine, freshly cooked and drained
2 Tablespoons fresh parsley, minced
 
  1. In hot oil, saute turkey breast with bacon, mushrooms and vegetables.
  2. Add turkey stock, nutmeg, sour cream and brandy. Gently reduce to sauce consistency. Cook 10-15 more minutes to thicken.
  3. Stir in goat cheese.
  4. Mix Swiss and Cheddar cheeses together. Mix egg and spinach linguine together.
  5. Per order: In individual ramekins, portion linguine and top with sauteed turkey. Sprinkle turkey with cheese mixture. Bake in a hot oven 2-3 minutes.
  6. Garnish with sauteed vegetables and sprinkle with parsley.
