Ground Turkey Mixture
10 eggs, lightly beaten
2-1/2 Cups TURKEY STOCK
2/3 Cup balsamic vinegar
2/3 Cup olive oil
3 Cups dry bread crumbs
2 Tablespoons fresh garlic, minced
1/4 Cup dried basil
1 Tablespoon dried oregano
10 Pounds GROUND TURKEY
As needed Salt and freshly ground black pepper
 
  1. Mix eggs, turkey stock, vinegar and olive oil together in a large mixing bowl.
  2. Continue to mix in bread crumbs, garlic and herbs. Mix well.
  3. Break up ground turkey and mix it in with the other ingredients.
  4. Incorporate all ingredients together. Do not over mix.
  5. Using a 6-ounce scoop, shape into patties. Cover and hold for service in refrigerator.
 
Grilling Turkey Burgers
  1. Season turkey burgers with salt and pepper. Place on preheated char broiler.
  2. Turn after 4 minutes.
  3. Continue to grill until the internal temperature reaches 165 degrees F.
 
Service and Plating
2 Cups coarse grain Dijon mustard
1-1/2 Cups heavy mayonnaise
27 Kaiser buns, split
2 Heads green leaf lettuce, washed, dried and chilled
4-6 tomatoes, thinly sliced
2 Pounds onions, thinly sliced
As needed pickle slices
 
  1. Mix mustard and mayonnaise together. Chill and hold for service.
  2. For each order, toast one Kaiser bun.
  3. Pipe mustard/mayonnaise mixture onto turkey burger.
  4. Place two tomato slices, 1 ounce sliced onion and pickle slices on each leaf lettuce.
  5. Serve with seasonal fruit salad.
