Ingredients
6 Pounds GROUND TURKEY
3 Cups onions, medium dice
1-1/2 Cups green peppers, seeded and medium dice
12 Cloves garlic, minced
2 Tablespoons sugar
1 Tablespoon ground cinnamon
1 Tablespoon cumin
1-1/2 Teaspoons ground cloves
2-3/4 Quarts stewed tomatoes
6 Medium Granny Smith apples, cored, medium dice
1-1/2 Cups golden raisins
3/4 Cup pimiento stuffed olives, drained well & thinly sliced
As needed cooked rice
1-1/2 Cups slivered almonds, toasted
 
  1. In large skillet, over medium-high heat, sauté ground turkey, onion, green pepper and garlic until turkey is no longer pink. Cook until a light caramelization of turkey and vegetables takes place.
  2. Stir in sugar, cinnamon, cumin, cloves, tomatoes, apples, raisins and olives.
  3. Bring to a boil. Immediately reduce heat, cover and simmer 15 to 20 minutes.
  4. Serve over rice and top with toasted almonds.
  5. May also be served as the filling for flour tortillas or as a stuffing for chili rellenos.
