Turkey Picadillo
| Ingredients |
| 6 Pounds GROUND TURKEY |
| 3 Cups onions, medium dice |
| 1-1/2 Cups green peppers, seeded and medium dice |
| 12 Cloves garlic, minced |
| 2 Tablespoons sugar |
| 1 Tablespoon ground cinnamon |
| 1 Tablespoon cumin |
| 1-1/2 Teaspoons ground cloves |
| 2-3/4 Quarts stewed tomatoes |
| 6 Medium Granny Smith apples, cored, medium dice |
| 1-1/2 Cups golden raisins |
| 3/4 Cup pimiento stuffed olives, drained well & thinly sliced |
| As needed cooked rice |
| 1-1/2 Cups slivered almonds, toasted |
| |
- In large skillet, over medium-high heat, sauté ground turkey, onion, green pepper and garlic until turkey is no longer pink. Cook until a light caramelization of turkey and vegetables takes place.
- Stir in sugar, cinnamon, cumin, cloves, tomatoes, apples, raisins and olives.
- Bring to a boil. Immediately reduce heat, cover and simmer 15 to 20 minutes.
- Serve over rice and top with toasted almonds.
- May also be served as the filling for flour tortillas or as a stuffing for chili rellenos.
