Smoked Turkey Lavosh with Herbed Cheese

Herbed Cheese
6 Ounces goat cheese, room temperature
6 Ounces cream cheese, room temperature
1/3 Cup sun-dried tomatoes, rehydrated and julienned
3 Tablespoons fresh thyme, chopped
3 Tablespoons fresh parsley, chopped
1-1/2 Tablespoons fresh tarragon, chopped
To Taste Kosher salt and freshly cracked black pepper
 
  1. In a food processor, blend goat and cream cheeses together until creamy. Fold in sun-dried tomatoes and herbs. Season with salt and pepper.
 
Assembly
4 16-inch lavosh cracker bread
2-1/2 Pounds SMOKED TURKEY BREAST, thinly sliced
4 avocados, thinly sliced
4 tomatoes, thinly sliced
10 Ounces onion and radish sprouts, washed and dried
 
  1. With a spray bottle, lightly spray lavosh cracker bread with water. Let stand for 5 minutes until cracker bread has softened.
  2. When lavosh is soft, spread each lavosh with 3 ounces of herbed cheese blend. Cover each evenly with 10 ounces sliced smoked turkey. Layer with avocado and tomato slices. Sprinkle with sprouts. Season with additional Kosher salt and black pepper.
  3. Gently, but tightly roll the lavosh "jellyroll" fashion. Wrap tightly with plastic wrap and chill for up to 12 hours. Repeat with remaining ingredients.
  4. Cut each roll in 3-inch sections.

Chef Paul Ornstein grew up in the Bay Area on Eastern European cuisine. He began learning the culinary trade at the early age of 14, when he took his first restaurant job. His restaurant experience has focused mainly on Italian cuisine and tradition and he attended cooking school in Tuscany to further his knowledge. Today, Chef Paul is the executive chef of Southpark Restaurant, offering dishes influenced by the traditions of Spain, Portugal, Italy, France and Greece. He also hosts cooking classes and demonstrations at the local Farmer's Markets, Portland Community College and In Good Taste.
