Turkey Chili

Ingredients
1 Pound great Northern beans
2 Ounces butter
1 Pound yellow onion, diced
1 Pound celery, diced
2 Pounds button mushrooms, cleaned and dried
3 Ounces garlic, minced
2 Pounds TURKEY MEAT, chopped or diced
salt
1 Ounce white pepper
Pinch nutmeg
Pinch Cajun pepper
1/2 Gallon TURKEY STOCK
2 Pounds cream cheese, cut in large chunks
As needed onion rings
 
  1. Soak beans in salt water for a minumum of 2 hours. Drain completely and rinse until the rinse water is clean.
  2. In a large soup kettle, heat butter and saute the onion and celery for about 3 minutes.
  3. Add whole mushrooms and continue to saute for an additional 3 minutes.
  4. Stir in garlic and turkey and cook for 5 minutes. Add salt, pepper, nutmeg and Cajun pepper.
  5. Stir in drained beans. Add 1/2 gallon of water and bring to a boil. Reduce heat and simmer until the beans are soft.
  6. Add turkey stock. Return to a boil. Reduce heat and simmer, allowing flavors to blend.
  7. Stir in as much of the cream cheese as is needed to give the chili a smooth consistency.
  8. Portion 8 ounces into each soup bowl and garnish with onion rings.

Recipe Source: This mild version of chili is perfect for a Kids Menu. Infact, the recipe was developed by Owner/Chef Nader Farahbod for his son, Brent. The chili is served at Billy's Restaurant in Lincoln, NE.
Chef: Nader Farahbod
Chef Nader Farahbod was raised in Iran. He came to the U.S. in 1977 and attended UNL, graduating with a degree in computer science. Due to insufficient funds he had to take a job in a kitchen, learning the fundamentals from the staff and other chefs as well as from books. In 1986, he began working at Billy's, near Lincoln, NE. After acting as both manager and chef for years, Chef Nader is now the chef/owner, operating an off-site catering business. He also works on his show "In the Kitchen" which is on the CBS affiliates' news broadcast every Monday at 6:30 am and 12 noon.
