Turkey Black Bean Guiso (Mexican Stew)

Ingredients
3/4 Gallon TURKEY STOCK, skimmed
4 Pounds TURKEY BREAST, cubed
12 Cups black beans, soaked, cooked & drained
3 Whole onions, minced
4 Cups carrots, peeled and chopped
3 Cups potatoes, peeled and diced
1 Each jalapeno, seeded and minced
1 Bunch cilantro, washed and chopped
To taste kosher salt
1-1/2 Cups tomatoes, peeled, seeded & chopped
12 lime wedges, seeded
As needed flour tortillas
 
  1. Combine turkey stock, turkey, cooked beans, onions, carrots, potatoes and jalapeno in a large stockpock. Bring to a boil, immediately reduce heat and simmer. Cook until turkey and vegetables are cooked through, about 20-30 minutes.
  2. Add cilantro and season with salt.
  3. Garnish each portion with 2 tablespoons chopped tomatoes and a lime wedge. Serve with warm flour tortillas.

Recipe Source: This recipe was developed by Kirk Parks of NAVA in Atlanta, GA. The flavorful soup recipe was a finalist in the 1999 NTF "Turkey with a Twist" Recipe Competition.
Chef: Kirk Parks
Born, raised and educated in a small farming community in Northwest IL, Chef Kirk Parks worked at the local steel mill after high school for several years until the economy forced it to close. At that time he started cooking at a local restaurant. He went on to work at various restaurants climbing his way up the ladder and eventually ended up as the pastry chef of NAVA in Atlanta, GA. Chef Kirk has been active in charitable events and was awarded Baker of the Year in 1993 for the Southwest by the James Beard Foundation. He was also published in Southern Living magazine.
